These lettuce wraps are amazing because they are so darn versatile. I use tons of fresh veggies in mine but you can add beans, rice and yes, even some meat if you choose. They are great for picnics, lunches and even packed up for your summer beach trips.
3 vine ripe tomatoes – diced
1 large cucumber – diced
1 cup cilantro
1 organic avocado
2 stalks celery
2 cups chopped cabbage/slaw mix
1 cup julienne sliced carrots (quick & easy hint: matchstick carrots from your produce department)
4 T lemon juice
2 t minced garlic
1 ripe mango or pineapple – cut into long strips
1 head romaine lettuce
Directions: Chop all veggies (except lettuce and mango/pineapple) and mix together in a large bowl. Whisk together garlic and lemon juice and pour over veggies. Toss until coated.
Lay out largest romaine leaves and spoon veggie mixture into leaves. Top with sliced mango or pineapple. Pick them up like you would a taco. Enjoy!
